Puri
Semolina/rava/sooji-1/2 cup
Baking soda-a pinch
Veg oil-1tsp
Water-4tbsp
Green chutney
Mint leaves-1tbsp
Garlic pod-1
Green chilly-1small
shallots-2
Fennel powder-1/4tsp
cumin powder-a pinch
Salt as required
water a drop
Red chutney
deseeded soaked dry red chilly-4
Salt ad reqd
water a drop
Sweet/saunth chutney
Deseeded pitted dates-4
Tamarind-small ball
jaggery-1tbsp
water-5tbsp
salt a pinch
Filling
Boiled smashed potatoes
One onion sliced
Chat masala-1tsp
salt a pinch
Sev
Besan/gram flour-1/2 cup
Oil-1tbsp
salt as reqd
chilli powder-1/4tsp
Asafoetida-a pinch
water reqd to make a smooth dough (i tuk 1/4 cup)
Curd -4tbsp mixed with little sugar
Method
To make puris add oil salt and baking soda to semolina and add water little by little and knead well for 15-20mins to get a tight elastic dough.cover with wet cloth and let it rest for 30mins.Meanwhile make chutneys.green chutney mix all the ingredients and grind well.you can add coriander leaves too.Red chutney grind the soaked dry chilly with water and salt.Saunth chutney boil dates in tamarind water with jaggery and salt till it thickens.
Make sev by making a smooth dough with the ingredients given and using an idyappam maker.Heta oil in oan and press the dough out through idyappam maker in circles little by little.
For puris after 30mins roll the dough very thin and cut circles with lid and drop in hot oil in low flame and take thm once slightly brown and puffed up.
Make a hole on top of puri..fill potato filling pour the three chutneys alternating on each.Pour curd on top garnish with sev.Serve immediately..You can use coriander leaves too..
