Raw papaya-1
Sugar-2cup
Water-1 1/2 cup
Vanilla essence-1tbsp

Method
Peel and clean raw papaya and cut into tiny cubes.Heat 2 cups of water and when it boils add the papaya cubes and cover and cook for five mins and drain the water.Papaya cubes will be transclucent now.In 1 1/2 cups water add sugar and boil it and add the papaya cubes once sugar dissolves and let it boil in syrup till syrup reduces as its absorbed.Then switch off flame and let the cubes be in syrup for 6hours or overnight.After 6hours take the papaya cubes which would have absorbed the syrup well and divide into parts ie how muchever colors you will use and add vanilla essence in each part and add desired colors and mix.Let it stay like that for another 6hours to absorb colour.After 6hours you can see the cubes well absorbed with colour and essence.Now spread them on a wire mesh or seive plates keeping a plate underneath for the extra syrup to drain and keep open for drying from 24-48hours.
