Date and Lime Pickle

Ingredients
Lime chopped and deseeded-1/4 cup
Dates chopped and deseeded-1/4 cup
Garlic chopped nicely-1/2tbsp
Dry chillies-2
turmeric a pinch
Green chillies-2
Mustard-1/2tsp
Fenugreek-1/2tsp
Asafoetida (kayam)-a pinch
Sugar-1/2tbsp
Chilly powder-1tbsp
Salt to taste
Gingely oil-2tbsp
Vinegar-1/2tsp
Method
To half tsp heated oil add the chopped lime and saute till cooked and soft add little salt and sugar amd keep aside.To the onr tbsp heated oil splutter mustard fenugreek..add garlic and saute..add dry chilly and green chilly saute and add turmeric chilly powder and asafoetida add chopped dates salt and little water and cover and cook for five minutes or so.Add lemon..check and adjust salt as needed.Add vinegar cook for a minute and switch off flame.Heat rest of oil and pour on top.Once cooled store in airtight bottle.Its best if you use after two days😊yum
