Eggless Butterless Mango Mousse cake

Maida-1 cup
Yoghurt (curd)-2/3cup
Sugar-1/2 cup
Veg oil-1/3 cup
Baking powder-1tsp
Baking soda-1/3tsp
Mango essence or vanilla essence-1tsp
Mousse
Mango pulp-1cup
Sugar-1/2 cup
Gelatin-1tbsp
Boiled hot water-1/3 cup
Whipping cream-1 cup
Frosting
Whipping cream-1/2cup
powdered sugar-1tbsp
Mango slices-few
Method
Preheat oven to 200c.
Mix yoghurt and sugar well till sugar dissolves.Add baking soda and baking powder and mix well and keep for five minutes.You will see it bubbling and will raise double.Meanwhile seive flour and keep.After that add essence and oil to the yoghurt sugar mixture and mix well.To this add seived flour in three batches and alowly fold in.Dont over mix.
Pour the thick batter to greased pan and reduce temperature to 180c and bake for 25-30mins ie till the inserted toothpick comes clean.
When the cake is baking prepare mousse.Pour the boiled hot water little by little to gelatin and mix well without lumps.Add the mango puree and sugar to it and mix well till sugar dissolves.Beat the whipping cream all one and half cup and keeping half cup aside for frosting decoration fold in the rest of beaten cream in two batches to the mango puree gelatin mix.Mango mousse is ready.
Now once the cake is ready cool it in wire rack.Once cake is cooled cut it in the middle to two halves.Apply mousse in top of one layer and keep the other half on top cover with mousse fully.Arrange the mango slices in a roae pattern or any pattern of your choice...I piped designs with rest of mango mousse on sides and on top piped whipped cream and on top of mango slices too as my mango though sweet was pale in colour😊...refeigerate for three hours atleast and serve...😊Yummiest eggless butterless Mango mousse cake is ready....Mine was over the moment it was cut😊😊
