Injipuli/Sweet&sour Ginger pickle

Ingredients
Ginger chopped into tiny pieces-1/2 cup
Shallots/pearl onion-10nos
Green chilly-1
Turmeric-a pinch
Chilly powder-1tsp
Asafoetida-a pinch
Mustard-1/2tsp
curry leaves-1tsp
Jaggery-2tbsp
Coconut oil-1 1/2tbsp
Tamarind-lemon size soaked in one cup of water
salt to taste
Method
I used earthern pot to make this as it gives an authentic taste to Inji puli.Heat oil splutter mustard..add chopped shallots saute for five minutes and add green chillies chopped ginger and curry leaves and saute for seven to ten minutes.Add turneric..chilly powder salt asafoetida and saute.Add tamarind soaked water and cover and cook.When it starts thickening add jaggery and cook till oil seperates and thickens.
Your yummy Injipulu (sweet and sour ginger pickle is ready..
Serve after few hours.Can be stored for two three weeks.😊
