Lemon Roulade

Ingredients
Maida/all purpose flour-1/4 cup
Egg yolk-2
Egg white-2
Sugar-4 1/2 tbsp
Lemon zest-1/2 tsp
Lemon essence (optional)- a drop
Filling
Butter-1/4 cup
Icing sugar-2/3cup
Lemon essence -a drop
Lemon juice-1 tbsp
Method
Preheat oven to 190c for 10mins.
Take one egg white and two egg yolk in a vessel and vigourously stir keeping the vessel in a simmering boiling water for less than five mins and take out.To the bubbly yolk mix add 3tbsp sugar and lemon zest and start beating till creamu.To it add lemon essence also and beat.To the mixture seive and add flour and mix and keep.Take the one egg white rwmaining and beat well with 1 1/2 tbsp sugar till you get soft peaks.
To the yolk flour mixture fold in the eggwhite mix in two batches smoothly.
Pour the batter to a greased pan and tap lightly and bake in the preheated oven for 12mins.
Meanwhile prepare the filling by beating butter sugar and essence or lemon zest till fluffy and then add lemon juice and mix well.
Keep the baked cake in pan for two mins and sprinkle powdered sugar in top.Place a tea towel on top of cake and a tray on top of that and invert the cake pan on it and remove the parchment paper on back of cake and sprinkle powdered sugar on the surface throughout.Slowly fold the cake with towel on both sides and bring the folds to middle to form a heart shape.and refrigerate the folded cake for 30mins to set its memory.After 30mins take out the rolled cake and unfold slowly and remove the tea towel.And spread the filling throughout and fold back now without towel.And keep in refeigerator till use.Sprinkle sugar again on top while serving.
