Spicy Prawns Biryani with Cherry chutney

Ingredients
Biryani
Basmati Rice-2 cups(I use Indiagate)
Water-4 cups
Prawns-1/4 kilo
Onion-2big sliced
Ginger garlic paste-1tbsp
Green chilly-3 sliced
Tomato-1 big chopped
Cinnamon stick-1 medium
Cloves-7-8
Cardamom-7 (i used powdered)
Bayleaf-2-3
Turmeric a pinch
Chilly powder-1 1/2tbsp
Coriander powder-1 1/2tbsp
Garam masala-1tsp (comprising of cinnamon,cloves,fennel,cardamom,star anise,pepper)
Curd-1tbsp
Carrot grated,cashew,raisins-1tbsp each (we dont like cilantro so used carrot..u can use cilantro)
Salt to taste
Prawns marination
Turmeric-a pinch
Chilly powder-1tsp
Pepper-1/2tsp
salt to taste
Cherry chutneyy
Fresh cherry potted deseeded and chopped-10
Shallots-5 sliced
Tamarind-lemon sized ball soaked in warm water (1/3 cup)
Jaggery grated-1 1/2 tbsp
Oil - a drop
Method
Clean deshell devein prawns and marinate with the ingredients given under marination for 30minutes in fridge.Wash and drain rice and keep.Boil four cups of water with required salt.In 1tbsp oil shallow fry the marinated prawns with curry leaves..flip sides.It will take 6-7mins.Keep the fried prawns aside and in the remaining oil fry 2tbsp sliced onion till golden brown also add carrot cashew and raisins and saute.Keep them aside (its for garnishing).
In 1tbsp ghee saute whole spices and add 1tbsp sliced onion saute add the drained rice and saute well for ten minutes.Meanwhile the water would have boiled add the sauted rice spice mix and cover and cook.Add 3tbsp oil to pan add rest of sliced onion saute add ginger garlic paste and saute..add turmeric chilly powder coriander garam masala and cook till raw smell goes and add tomato and cook till oil seperates.Add the feied prawns curd and required salt and cook for 6-7minutes.Meanwhile check if rice is cooked and switch off flame.Now start layering rice and prawns alternatively.Garnish with fried onions carrot cashew and raisins on top and cover and xook for ten minutes in low flame.
For cherry chutney in a drop of oil saute sliced shallots and cherry and add the tamarind water and jaggery and cook till it thickens.
Your yummy spicy prawns biryani.and cherry chitney is ready.Serve with raita.😊
