Tirunelveli Halwa/Wheat Halwa

Ingredients
Wheat flour-1/2 cup
Water-2 cup (for soaking)
Sugar-1 1/2 cup
Cardamom powder-1tsp
Cashew-1tbsp(roasted in a drop of ghee)
Ghee-1/4 cup
Food color-a pinch (optional yellow or orange)
Method
Make a dough with the wheat flour and soak the dough in water for 30minutes.After 30minutes mix the soaked dough in that water well without lumps.Then strain the same to another vessel completely.Throw away what is accumulated in the strainer after squeezing it in well.Now keep the strained wheat milk intact without touching for half an hour.After half an hour you will see clear water on top and the thick milk settled down.Slowly without shaking pour out the clear water alone.Now you will have one cup of thick wheat milk.
Heat a pan pour this one cup of wheat milk and stir and let it boil..once it starts boiling add sugar and a pinch of food colour and keep stirring.Add ghee one tablespoon initially..keep stirring.When it starts thickening add the roasted ghee and keep stirring and adding ghee in between.Once it starts leaving the sides of pan add cardamom powder and keep stirring.It took almost an hour for me to reach the consisitency.After five minutes when it becomes real thick transfer to a greased vessel and let it cool in room temperature completely.
Its difficult to cut into pieces intact as its actually of scooping type.Still you can if you cut real patiently😉

Infact sambha wheat is soaked for overnite grinded and soaked in water strained and used.
