Kaju Katli

Recipe
Ingredients
Cashewnuts-1/2 cup
Sugar-4tbsps
Water-3tbsps
Cardamom powder-a pinch
Ghee-1/3tsp for greasing
Method
Powder cashewnuts in mixer jar (just pulse it coarsely dont pulse too much as it starts leaving oil if you grind too much and the texture gets affected).
Heat pan add sugar and water and let it come to one string consistency in low flame(it takes no time as water added is less).
Add powdered cashewnuts to this and stir adding in cardamom powder too till it leaves the pan and forms a lump.
Now let it cool a bit.Grease a parchment paper and drop the warm lump on it and start rolling keeping inside parchment paper to desired thickness.
Let it cool down and set completely (if you are in a hurry just pop it in freezer for 10 minutes and take out and cut pieces).

You can cut them to pieces once cooled.If you wish to add edible silver leaves on top do that before you roll.Keep them on top and roll slightly.
I garnished with crushed pistachios and saffron strands.
