Cranberry Lemon pound cake

Ingredients
All purpose flour-2cups
Butter-2/3 cups
Egg-2
Sugar-1 1/2 cup
Yoghurt/sour cream-1/2 cup
Vanilla essence-2tsp
Lemon zest-1tbsp
Dried cranberry soaked in warm lime juice-1/3 cup or fresh cranberry without soaking(I used soaked dry ones)
Baking powder-1tsp
Salt a pinch
Method
Preheat oven to 180c.
Seive flour baking powder and salt and keep aside.
Beat butter and sugar well till fluffy
Add in one egg after each beating well.Add essence and lemon zest beat well.Now alternate flour mixture yoghurt in three batches and fold in to the wet mixture.Lastly add the soaked drained cranberry and fold in.
The batter will be thick.Now transfer the batter to greased lined pan.
Tap pan twice on counter to release aur bubbles.
Bake for 50 to 55 minutes ie till the tooth pick you insert in the middle comes out clean.
Cool on rack.Enjoy having the most yummy cake..
