Suji Manda Pitha/Semolina pancakes

Ingredients
Suji/Semolina-3/4cup
Water-1 1/2cup
Sugar-6tbsp
Butter-1/2tsp
Filling
Grated coconut-1/2cup
Tuttifrutti,raisins,cashews-1tbsp
Ghee-1/2tsp
Cardamom powder-a pinch
Method
Half cup grated coconut to be sauted in little ghee or butter along with some raisins tutifruti cashews.Switch off flame and add cardamom powder and required sugar as you wish.keep aside.
Take 3/4 cup semolina keep aside..take 1 11/2 cup of water pour in hot pan add 6 tbsps sugar and a little ghee or butter and stir till it dissolves...add semolina little by little keep stirring well.it will thicken firm like a dough.switch off flame .let it cool a bit.heat oil in pan.grease ur palms with ghee or oil take a dough ball shape make a pit add coconut filling seal.and shape into flat balls without any cracks.
Drop them in hot oil flip sides and fry till slightly golden in color..ready🤗
