Halawet Manju Al Jibn
Ingredients
Sugar Syrup
Sugar-1cup
Water-1/2cup
Lemon juice-1tsp
Rose essence+orange blossom water-3/4tsp
Filling(Mango cheese cream)
Ripe Mango-4 long pieces
Cream cheese-2 portions
Whipping cream-1/3 cup
Sugar-2tbsp
Dough
Water-1/2 cup
Sugar-4tbsp
Semolina-1/2cup
Shredded Mozarella Cheese-140gms
Rose essence-1tsp
Garnish
Grounded pistachios-1tbsp
Mango pieces-tiny
Method
Sugar Syrup
Boil water and sugar..add lemon juice.Once it comes to a boil simmer it for 2 minutes add essence and switch off.
Filling (Mango Cheese Cream)
Take mango pieces and cream cheese in a mixer jar and blend till smooth.
Keep bowl on ice cubes beat whipping cream with sugar till it forms stiff peak.Add the mango cream cheese mix and beat till well combined.
Now take a zipper lock bag keep it opened in a mug or glass spoon in the cream into it and make a piping cone.Keep it on ice cubes or refrigerate till use.
Dough
Heat pan add water and sugar and when sugar dissolves add semolina and stir well.When it starts thickening add shredded mozarella cheese and rose essence and stir till it forms a cheesy dough.
Switch off flame.Dont taste the dough now because you will not stop eating then😝
Now keep the dough in between cling wrap and roll out using a rolling pin.Trim the uneven edges(eat them now😍)..Divide and cut the flattened dough into 3 long parts.
Take the piping cone with cream cut its end and start piping one straight line of cream on each cut strip of dough.Roll the strip of dough over the cream.You will get 3 cream rolls now.
Cut the rolls into tiny pieces and plate them.Garnish with crushed pistachios and mango pieces.
Serve pouring the prepared sugar syrup on top.
