Tres Leches Cake

Recipe

 Ingredients

All purpose flour-180gms/1 1/2cup
Butter(at room temperature)-200gms/1cup(unsalted)
Sugar-180gms/3/4 cup plus 1 tbsp
Eggs-3
Milk/yoghurt-3tbsps
Baking powder-3/4tsp
Vanilla essence-1tsp
Salt-a pinch

Soaking
Condensed milk-1/4cup
Evaporated milk-1/4 cup
Fresh cream-1/4 cup
Icing
Whipping cream-1 cup
Icing sugar-3 tbsp

Method

Preheat oven to 180c.

Line and grease baking pan.

Seive flour baking powder and salt and keep aside.

Beat butter and sugar till creamy.Add egg one by one and keep beating till fluffy.Add vanilla essence and combine.

Now add flour and milk in 2 or 3 batches alternating flour and milk and fold in till well combined.Batter will be thick.

Do not overbeat.

Bake for 45 minutes (or as per your oven heat) till toothpick inserted at the middle comes out clean from cake.

Keep on rack and cool.

Bring eggs butter and milk to room temperature and then use.

Mix condensed milk evaporated milk and fresh cream and make around 300 holes on top of cooled cake with toothpick or fork and pour the mixture on cake.

Keep it covered with cling wrap on top in refrigerator for four hours.

Cake will absorb the milks and be moist and soft.Slowly remove from pan and start icing with whipped cream and sugar beaten well till stiff peaks formed.
