Baked Blueberry Cheesecake

Ingredients
Base
Biscuits-90gm crushed
Melted butter-2tbsp
Sugar-1tsp
Cake
Creamcheese-100gms
Sugar-1/2cup
Egg-2
Sour cream-2tbsp
All purpose flour-1 1/2tbsp
Vanilla essence-1/2tsp
Lemon essence or lemon zest-1/2tsp
Topping
Blueberries fresh-1/4cup
Corn flour-1tsp
Lemon juice-1tsp
Water-1/4tsp
Sugar-2tbsp
Optional
Whipped cream-1/4cup
Method
For the given measurement use a 6 inch pan (either a springfoam base removable pan or well lined pan..).Please do not substitute given ingredients or skip an ingredient if you wish to get the perfect taste😊
Base
Preheat oven to 180c.
Mix melted butter and sugar with crushed biscuits and
Mix to combine.Now drop this into lined pan and press the mix to base of pan using a flat surfaced lid or tiny bowl.Now bake this base fir 7 minutes in preheated oven.
Cake
Meanwhile beat creamcheese and sugar together well.Add egg one by one and beat till pale and fluffy.To this add essences /zest ,sour cream ,flour and beat well.
Pour the batter to the baked cooled down pan with crust base.
Now take a wide tray or pan and place the cake pan in it(cover outer side with aluminium foil if using removable base pan) and place it in oven and pour water into the wider pan till it reaches the quarter level of the cake pan with batter.
Reduce temperature to 170c and bake for 15 minutes and then reduce it to 140c and bake for another 40 minutes.
Once done let the cake remain in ovwn for another one hour after switching it off but with door slightly open.
Topping
Take the ingredients together in a bowl and microwave it for 1 minute or boil it till it thickens.Keep to cool down.
After an hour take out the soft cheesecake to a plate spread whipped cream on top(optional) and then spread out the bluebbery topping on it.
Refrigerate for 3 hours and serve😍Your yummiest addictive Baked blueberry cheesecake is ready😊
