Bakery style alcohol free Plum Cake
Recipe
Ingredients
All purpose flour-1 cup
Butter-2/3cup at room temperature
Sugar-3/4cup plus 1/2cup sugar for caramelisation
Baking powder-1tsp
Egg-2
Vanilla essence-1/2tsp
Cinnamon powder-1/4tsp
Cardamom powder-1/4tsp
Nutmeg powder-1/4tsp
Clove powder-1/4tsp
Salt a pinch
Soaking
Orange juice-1/4cup
Tuttifrutti,raisins,cherry-2tbsps each
Cashewnut broken-3tbsp
Method
Soaking
Soak the tuttifrutti,raisins and cherries (you can add dates/prunes etc) in orange juice for atleast 4 to 6 hours.
Caramelisation
First take half cup of sugar in a heavy bottomed pan and start heating.Keep stirring till it melts and turns into a golden syrup.Do not burn it.Now slowly pour half cup of water into it taking care not to burn your hands.Keep stirring.Switch off once it gives a boil.Let it cool.
Cake
Preheat oven to 180c.Grease and line a small pan(6 or 7 inch).
Now beat butter and sugar till combined.Add egg one by one and beat till pale and fluffy.Add essence and cooled caramelised syrup and beat.To this seive and add flour, baking powder,salt,spice powders in batches and fold in.
Fold in the soaked fruits and few cashews.
Transfer the batter to pan and sprinkle cashews on top.
Bake in preheated oven for 45 minutes or as per your oven heat.
Check if done by inserting a toothpick into middle of the cake.If it comes clean its done.
Cool on rack,cut and serve.
Your yummiest bakery style plum cake is ready.
