Ingredients
Rice flour-1cup
Thick coconut milk-2cup
Thin coconut milk-2cup
Jaggery-1cup melted and filtered with 1 cup water and cooled down
Egg-1
Fennel powder-3/4tsp
Coconut oil/ghee as needed
Cashews,peanuts and raisins
Method
Take ghee in a pan and roast cashews,raisins and peanuts and keep aside.
Take a wide pan add rice flour and to this add thin coconut milk and mix without lumps..to this add beaten egg and thick coconut milk and fennel powder mix well.To this add melted,filtered and cooled jaggery and mix well.
Now keep this on flame and start stirring.Do not leave stirring.As it starts thickening drizzle coconut oil or ghee and keep stirring.Do likewise drizzling coconut oil or ghee in between until it starts leaving the pan.Mix in cashews peanuts raisins and switch off flame.
Now preheat oven to 180c.
Take a pan greased with ghee and transfer the prepared batter to the pan and level it with a spatula greased with ghee.
Now bake this for 25 minutes.
Let it cool down in pan itself.
Once completely cooled cut and enjoy the unique yum Orappam.
Shelflife is less for orappam hence refrigerate if any leftover pieces and use for 2 days microwaving before consuming..
