Ingredients
Dough
All purpose flour-1 1/2cup
Oil,water and salt as needed
Filling
All purpose flour-3tbsp
Custard powder-3tbsp
Vanilla essence-1/2tsp
Sugar-1/4cup
Oil+dalda or ghee-each 3tbsps
Method
Knead a soft supple dough using all purpose flour,oil,water and salt and let it rest for 8 to 10 hours in a bowl covered with cling wrap.
After 8 to 10 hours take out the dough dust your clean counter surface and start rolling the dough into very very thin paper like(at shop experts throw them and make it bigger).This step of making it thinner is very important and tricky too because this one gives the varkey the right texture.
Now apply oil and dalda on the thin sheet.Next spread all purpose flour and custard powder throughout on top.Now sprinkle sugar all over.Fold the sheet into four.
Preheat oven to 200c.Line a tray.Roll out the folded sheet once more.Cut strips on it.Take out half of each strip and roll roughly into a ball and keep on tray.
Bake for 20 minutes initially keeping on top rack.Next reduce temp to 170c and bake again for another 25 minutes.
It has to become golden brown and crisp hence bake as per your oven heat.
Cool on rack and store in airtight container.Enjoy dipped in teaπŸ˜‹πŸ˜
