Qatayef Asafiri with Ashta

Ingredients
Qatayef Asafiri
All purpose flour-1/2cup
Semolina-1/2cup
Sugar-1tbsp
Milk powder-1tsp(optional)
Yeast-1tsp
Warm water-1 1/4cup
Salt a pinch
Ashta
Milk-2cup
Lemon or vinegar-1tsp
Milk-1/2cup and Heavy cream-1/2cup
Corn flour-2.5tbsps
Sugar-4tbsps
Rose essence&kewra water or orange blossom water-1tsp
Garnish
Pistachios powdered
Method
Ashta
Boil 2 cup milk and as it starts boiling add lemon juice or vinegar and stir to curdle milk and switch off.Now strain the curdled milk in a strainer and keep aside.Take half cup milk and half cup heavy cream and start heating.Add cornflour and sugar and start stirring with a whisk or slotted spoon till it thickens.Add the strained curdled milk to this and mix well and switch off flame.Add essence and kewra water and mix well.Now transfer this to a bowl to cool.Once cooled cover with cling wrap and refrigerate for 3 hours.
Qatayef Asafiri
Mix all the ingredients in warm water and keep aside closed for 30 minutes.
After 30 minutes heat a wide pan and start making small pancakes .Do not flip side but let it just cook both bottom and on top.
Do not let it dry..keep them covered.Once done keep spoonful of ashta on the pancakes and fold and seal the ends on top and bottom.
Sprinkle pistachio powder on ashta on top.
Serve and relish😍😋
Note:My ashta was pleasantly sweet so no need of sugar syrup but if you wish can reduce sugar in ashta and use sugar syrup while serving😊
