Beetroot Jam

Ingredients
Beetroot-500grams peeled and washed
 Water-1/2cup
 Sugar-11/2cup
Lime juice-1tsp
Strawberry essence-1tsp
Method
 Chop the peeled and washed beetroot into medium sized pieces and pressure cook for 3 whistles on low flame with half cup of water. Once pressure is released,transfer the cookes beetroot along with water in a mixer jar and grind it to puree.You will get 2 cups of puree. Now heat a wide pan and pour the puree into it and start stirring.Flame should be on low.Once the water content evaporates add sugar and keep stirring.When is starts thickening add lime juice and keep stirring.After some 5 minutes add strawberry essence and stir.Never leave stirring as it may burn the jam.To check the doneness take a spoonful of jam and drop into a clean plate and tilt it slightly.If it diesn ooze out any liquid but stays like a gel cook for another 7 minutes and switch off flame.Once cooled transfer the jam to a clean dry airtight bottle.
