Caramel Cashew Cake

Ingredients
All purpose flour-3/4cup
Sugar-1/2cup
Firmly packed brown sugar-1/4cup
Baking powder-1/2tsp
Oil-2tbsp
Egg-2
Milk-3tbsps
Vanilla essence-1/2tsp
Chopped cashews-1/4cup
Salt a pinch
Topping
Chopped cashews-2tbsps
Firmly packed brown sugar-1/4cup
Butter-2tbsp at melted
Heavy/whipping cream-41/2tbsps
Method
Cake
Preheat oven to 180c.Line a cakepan.
Take flour,sugar,brown sugar,baking powder and salt in a bowl and mix well.To this add eggs,oil,milk and essence and mix well.Fold in chopped cashews.
Pour the batter into cake pan and bake for 20 minutes or as per your oven heat.
Topping
Meanwhile prepare topping by mixing all the ingredients given under topping leaving the cashews alone.
Now after 20 minutes take out the cake pan and pour the topping on top of cake and sprinkle cashews and bake again for another 5 minutes on topmost rack.
Once done switch off oven and let the cake remain inside for 5 minutes and take out.Let the cake cool down completely and then cut and serve the most delicious Caramel Cashew Cake.
