Carrot Laddoo

Recipe
Ingredients
Grated carrot-2 cups(I used red carrot)
Milk-1/2cup
Sugar-1/2cup
Condensed milk-1/3cup
Grated coconut-1/4cup
Ghee-2tbsp
Cashews,almonds,pistachios-roasted in ghee and crushed-2tbsp
Cardamom powder-a pinch
Method
Heat ghee in pan.Add grated carrot and saute till it shrinks little.Add milk and cover and cook on low flame for 7 minutes.Add grated coconut,sugar,condensed milk and nuts(reserve some nuts for garnishing) and mix well and cover and cook in low flame till it becomes dry.
Now add cardamom powder,mix and switch off flame.Let it cool.Once cooled make lemon sized ladoo and garnish with rest of nuts.
Your delicious carrot laddoo is ready.
It cwn be stored in airtight container at room temperature or refrigerated for 3 days.
