Chettinad Prawns Masala

Ingredients
Prawns-500gms (deveined and cleaned)
Marination
Turmeric powder-1/4tsp
Chilly powder-1/4tsp
Lemon juice or vinegar-a drop
Salt a pinch
Chettinad Masala
Cinnamon stick-4 small 1inch sticks
Cardamom pods-4
Cloves-7
Pepper-1tsp
Cumin-1tsp
Fennel-1tsp
Coriander powder-3tsp
Ajwain/carrom seeds(optional)-1tsp
Dry red chilly-4 small
Masala
Onion chopped-1
Tomato chopped-1
Ginger garlic crushed-2tsp
Curry leaves -a handful
Turmeric powder-1/2tsp
Kashmiri chilly powder-tsp
Garnish
Coriander leaves
Method
Marination
Marinate the deveined,cleaned prawns with the ingredients given under marination for 30 minutes.
Chettinad Masala
Dry roast all the ingredients given under chettinad masala till raw smell goes away.Powder it in mixer jar and keep aside.
Masala
Heat oil in pan and add chopped onion and saute till transclucent.Add crushed ginger garlic and half of curry leaves and saute.Add turmeric and chilly powder and tomato and mix well.Let it cook till it becomes mushy.Now add 4 tsp of prepared chettinad masala,marinated prawns and rest of curry leaves and mix well.Add needed salt and little water.Cover and cook for 7 minutes.After 7 minutes open the lid and stir for 2 minutes and switch off flame.Serve with coriander leaves garnished on top.
