Pineapple Tiramisu

 Ingredients

 Any sponge cake (I baked eggless vanilla cake) or white bread slices or the authentic lady's finger biscuits
 Pineapple chopped-1 cup
 Sugar-1/3 cup
 Water-3/4cup

 Cream layer
 Eggs-2 (yolks and white seperated)
 Sugar-1/2cup
 Pineapple essence a drop
Cream cheese or mascarpone cheese-3tbsps

 Top garnish

 Dessicated coconut-optional (but trust me this enhances the yumminess)

 Method

 Cook chopped pineapple in water and 1/3cup sugar for 10minutes.Cool and drain the juice into a bowl and keep pineapple chunks sepearate. Now prepare the cream layer.Beat egg whites adding 3 tbsps of sugar little by little till it forms stiff peak.Now in another bowl take egg yolk,cheese,rest of sugar and essence and beat till creamy.Now fold in the beaten egg whites to this mixture till combined.Now fold in the cooked oineapple chunks reserving some for garnish. Now lets layer.Take a glass tray take the sponge cake pieces or bread pieces or ladys finger biscuits and dip in the pineapple juice we had drained and place a layer first.Next drop a layer of prepared cream.Again dip few more pieces of cake or bread and place on top.Layer the remaining cream on top. Now for the garnish part.I had some juice left and I added the dessicated coconut in it and mixed it and sprinkled on top and also decorated with the leftover pineapple chunks. Refrigerate covered with cling wrap for an hour and serve.Your most yummiest Pineapple Tiramisu is ready😋
