Cherry Poke Cake

Ingredients
Maida-1 1/2 cup
Sugar-1 cup
Butter-1/2 cup
Milk-1/2 cup
Egg-2 (if you prefer eggless add 4tbsp curd)
Baking powder- 1 1/2 tsp
Vanilla essence - 1 1/2 tsp
For the cream
Whipping cream-1/2 cup
Powdered sugar-3tbsp
Vanilla essence-1/2tsp
For the syrup
Cherry gelatin-40gms
Water-1 cup
Filling
Fresh cherry-10nos
Cornflour-1/4 cup
Sugar-6tbsp

Method
Preheat oven to 180c (15mins).
Mix flour baking soda well and keep.
Beat sugar and butter well.Add egg one by one or curd and vanilla essence and beat well and start mixing in flour to this alternating with milk.Pour the batter in greased pan and bake for 45mins.
Once done keep the cake for cooling meanwhile prepare syrup by boiling one cup water and put cherry gelatin in it and mix.Once its cooled make small holea with fork or straw on cake one inches apart all over the top.Pour the cherry gelatin on cake.Refrigerate for three hours.The gelatin will be absorbed in cake creating pink.streaks all through.Make cream filling by whipping fresh cream powdered sugar and essence (you get readymade too).Take the cake out of pan and cut in middle to half and if you like cherry filling then prepare them by boiling deseeded cherry with water sugar and cornflour cool and apply on half on top apply cream keep the other half of cake on top apply cream fully and decorate as you wish.or you can simply use cream alone between without filling.
Your cherry poke cake is ready.
