Recipe
Ingredients
Maida-1 cup
Yoghurt-1 tbsp
Baking soda-1/4tsp
Veg oil-1tbsp
Sugar-1tsp
Salt as per your taste
Filling
Potato-1 big boiled and peeled
Onion-1 medium sized
Green chilly-1 big sliced
Mango powder or chat masala-1tsp
Coriander leaves-1tbsp (I didnt have them so added oregano)
Grated parmesan or cheddar cheese (optional)-1tsp
Salt as per your taste
Method
Mix flour with salt sugar yoghurt oil and baking soda and make a sift dough.Apply little oil in hands and knead well for five to seven mins to form a smooth dough.Cover with wet towel and let it rest for 3-4 hours.After four hours take the doubled up dough and knead again for few mins and divide to five balls.Smash boiled potato add onion green chilly salt mango powder or chat masala grated cheese coriander leaves and divide to five balls.Now heat tawa and roll a small circle of one dough ball and keep the one filling ball and seal all sides covering and flatten with hand and spread the filling inside dust flour and roll with rolling pin.Apply a little ghee on tawa cook the kulcha by flipping both sides applying ghee.Likewise make the other dough balls and filling..Your yummy soft Amrist

you mentioned Baking powder in recipe but in your description you say baking soda, so please correct it what exactly we need to add..
