Iyengar bakery style honey cake(eggless version)

Ingredients
Cake
All purpose flour-1 1/2cup
Corn flour-1/4cup
Condensed milk-1/2cup
Butter-1/2cup
Milk-3/4cup
Vanilla essence-1tsp
Lemon juice or vinegar-1tbsp
Baking powder-1 1/2tsp
Baking soda-3/4tsp
Salt a pinch
Topping
Honey syrup
Sugar-1/4cup
Water-1/2cup
Honey-1/4cup
Rose essence-a drop

Jam topping
Mixed fruit jam-3tbsp
Sugar-2tsp

Dessicated coconut

Method
Cake
Preheat oven to 180c.
Seivw flours baking powder baking soda and salt and mix well and keep aside.
Ccombine butter condensed milk essence and whisk it well.
Now add the seived flour and milk to this in alternate batches and mix till combined.
Transfer the batter to lined greased pan.
Bake for 30 minutes or as per your oven heat till skewer inserted at middle of cake comes out clean.
Cool on rack.
Honey syrup
Prepare syrup by boiling sugar in water till dissolved.Switch off flame and add honey and mix well.Add rose essence.
Jam topping
Heat jam and sugar till it boils.Switch off flame.
Poke holes on cooled cake with fork or toothpick and poyr the honey syrup throughout.
Spread the jam topping throughout while its hot itself.
Sprinkle dessicated coconut.
Enjoy.
