Chicken Biryani

Recipe
Ingredients
Chicken-500gms
Marination
Turmeric powder-1tsp
Chilly powder-1/2tsp
Pepper-a pinch
Salt as required
Lime or vinegar-1tsp
Biryani Masala
Shallots-5 peeled
Garlic pods -5peeled
Green chilly-4
Dry red chilly-4
Ginger-4small pieces
Cilantro-3tbsp
Mint leaves-3tbsp
Water-2tbsp
Coriander powder-4tbsp

Gravy
Onion sliced-3
Tomato sliced-2
Chilly powder-2tsp
Whole spices(cardamom-5/cloves-5/cinnamon-2tiny sticks/bayleaf)
Coconut milk-1/2cup
Salt as needed

Rice
Basmati rice-2cups
Water-4cups
Salt as needed
Saffron a pinch soaked in 1tbsp warm milk
Garnish
Cashews and raisins optional
Method
Marinate
Marinate the cleaned chicken pieces with the ingredients given under marination.Marinate for 30 minutes.
Biryani Masala
Take the ingredients given under this except coriander powder in a mixer jar and grind to a smooth paste.
Add coriander powder to this and mix it and keep aside.
Gravy
Heat oil in wide pan.Saute whole spices..add sliced onion and saute till golden brown.Add tomato and saute till mushy.Add the prepared biryani masala and chilly powder and saute till raw smell goes away.
Add marinated chicken pieces and coconut milk adjust salt and cover and cook till it thickens.
Rice
Heat pan and add a drop of ghee and drop the washed rice into it and fry on low flame.Add water and needed salt along with saffron soaked in warm milk and cook till done.
Mixing
Once both the gravy and rice is done mix in layers and cover and cook on low flame for 7 minutes and switch off.
Garnish with roasted cashew and raisins which is optional.
Serve with raita.Yum.
