Eggless Jam Roll

Ingredients
All purpose flour-1cup
Powdered sugar-1/4cup plus 2 tbsps
Condensed milk-1/4cup
Butter at room temp-2tbsps
Oil-2tbsps
Milk-1/2cup
Vinegar-1tsp
Vanilla essence-3/4tsp
Baking powder-1tsp
Baking soda-a pinch
Salt a pinch
Topping
Mixed fruit jam-1/4cup mixed well to a smooth paste
Dessicated coconut-1tbsp
Method
Preheat oven to 180c.
Grease a long tray(I used 9×14") and line with baking paper.
Add vinegar to milk and mix well.Keep aside.
Take butter,oil,powdered sugar(leaving aside 2 tbsps) ,vanilla essence and condensed milk and mix well to form a smooth paste.
To this add the milk mixed with vinegar and combine well.
To this wet mixture seive and add flour,baking powder,baking soda and salt and fold in till combined.
Now transfer the batter to tray and spread.Tap to release air bubbles.
Now bake for 8 minutes(gas oven) or 5minutes if other.
Keep a long baking paper ready.
Once done sprinkle powdered sugar kept aside earlier on top of cake throughout.
Keep the cut baking paper on top and flip the cake on it.
Slowly peel off the baking paper on top.Cut the edges.
Now spread the loosened jam all on top evenly.
Roll the cake gently along with baking paper on top.
Once done cover the roll with baking paper and refrigerate for an hour to set.
After an hour spread some more jam on top of roll and sprinkle dessicated coconut and cut and serve the yummiest softest eggless jam rolls🤗
