Kerala Style Chicken Roast

Ingredients
Chicken-500gms
Marination
Turmeric powder-1/2tsp
Chilly powder-1tsp
Garam masala-a pinch
Vinegar or lime juice-1tsp
Salt as needed
Roast
Onion sliced-1 big
Green chilly-2slit
Ginger garlic crushed-1tbsp
Tomato puree-1/4cup
Tomato sliced-1
Turmeric powder-1/2tsp
Kashmiri chilly powder-2tsp
Coriander powder-3tbsp
Garam masala-1tsp
Curry leaves
Salt as needed
Method
Marination
Marinate the cleaned chicken pieces with the ingreduents given under marination for 30 minutes to 1 hour.
Roast
Heat oil in deep pan and fry the marinated chicken pieces and drain and keep aside.To the same oil add ginger garlic crushed and saute,now add sliced onion aling with green chilly and saute till raw smell goes away.Add the spice powders (turmeric,chilly,coriander and garam masala) and saute.Add tomato puree and sliced tomato and let it cook till oil seperates.
To this add fried chicken pieces and curry leaves and little water.
Cover and cook till it thickens to roast.Adjust salt as required.
Your delicious Kerala style Chicken Roast is ready to go with rice,chapathis,rotis,parotta or appam.
