Coriander Rice

Ingredients
Basmati rice-11/2cup
Masala
Onion-1sliced
Whole spices-cumin-1tsp,cardamom-3,cloves-3,cinnamon stick-1inch sticks-2
Grinding
Onion-half
Garlic pod-3
Ginger-a small piece
Coriander leaves-1cup
Mint leaf-1/4cup
Lemonjuice-1tsp
Saute
Coriander powder-1tbsp
Cumin powder-1tsp
Garnish
Ghee roasted Cashew
Method
Wash basmati rice and saute in a drop of ghee.Cook adding required water,salt and a droo of lemon juice.I take 2 cups of water for one cup of rice.Keep the cooked rice aside.
Now heat oil and a drop of ghee in pan
Saute the whole spices,add chopped onion qnd saute till transclucent.
Grind the ingredients together given under the heading ingredients to a paste.Add this paste to the sauted mixture and cook for 2 minutes.Add coriander powder and cumin powder and a dash of salt and saute.To this add the cooked rice and mix gently.Cover and cook on low flame for 2 minutes and switch off.Garnish with ghee roasted cashews and serve😋
