Soan Papdi

Ingredients

Gram flour-1cup
Ghee-1/2cup
Cardamom powder-a pinch

Sugar syrup
Sugar-1cup
Water-3/4cup
Lemon juice-few drops
Salt a pinch

Garnish
Crushed pistachios

Method
Heat gram flour and ghee in a pan.Keep stirring on low flame.Add cardamom powder.Keep stirring as it leaves the raw smell out and start smelling good like sweet and becomes bubbly.Switch off flame then and stir for 2 minutes to avoid burning sitting in pan.Keep aside.
Prepare sugar syrup by boiling sugat and water.When it starts boiling add lemon juice and salt and stir.When it dissolves and boils well take a drop of syrup and drop in cold water.If it becomes a mass and comes in fingers like a jelly the consistency is ready.
Take the sugar syrup into a plate greased with ghee.Start stirring with two fork.It starts thickening as it cools.Keep stirring.When it gets difficult to stir apply grease in palms and start mixing.When it changes colour and becomes a mass.Add the flour mixture and mix well to combine.
Now transfer this to a greased tray.It will be loose.Shape and it sets soon.Sprinkle crushed pistachios on top.After 10 minutes it sets well.Our flaky melt in mouth soan papdi is ready.Cut and serve.Can be stored for a week at room temp and later refrigerate for a week.
