Pav Bhaji

Ingredients
Pav
All purpose flour-2 cup
Active dry yeast-2tsps
Warm milk -3/4cup
Sugar-1tbsp
Butter-2tbsps
Salt a pinch
Bhaji
Green peas-1/4cup
Potato-2medium sized
Onion-chopped 1
Capsicum-chopped 2 tbsps
Ginger garlic paste-1tsp
Tomato-1chopped
Garam masala-1/2tsp
Chilly powder-1tsp or more as per your spice level
Pav bhaji masala (dry roast dry red chilly,coriander powder,peppercorn,cumin seeds,cardamom,clove,cinnamon,fennel and powder it add amchur powder and mix or buy readymade powder)
Salt as needed

Method
Pav
Proof yeast in warm milk and sugar and pour into the flour and mix well.Now add butter and starr kneading till dough is soft and supple.
Keep the dough in a greased bowl covered with cling wrap in warm place for 1 1/2hours to raise.
After 1 1/2hours take the raised dough and punch out air and knead fir 2 to 3 minutes and divide into equal dough balls and shape and place on tray.
Keep it aside for 45 minutes again to proof.
Preheat oven to 200c after 45 minutes.
Do milk or egg wash on raised dough top.
Bake for 15 to 20minutes till done.
Brush butter on top and keep on rack to cool.

Bhaji
Pressure cook green peas and potato well.
Heat little butter or oil saute chopped capsicum add onion and saute well.Add tomato and saute till mushy.Add spice powders and pav bhaji masala and add the cooked veggies along with its water and add ginger garlic paste and mix and mash well.Adjust salt and cook till it thickens.
Add a small cube of butter.

Serve with chopped onions and cut pav into two not completely but halfway and toast with butter inside.
