Pachoru/Jaggery rice

Ingredients
Raw rice/Matta broken rice(I used matta broken rice)-1cup
Water-5cups
Melted&filtered jaggery-1cup
Grated coconut-1/4cup
Cardamom powder-1/2tsp
Cumin or chukku powder-1/2tsp
Cashews and raisins roasted in ghee-2tbsps each
Salt a pinch
Method
Wash and rinse rice well.Take 5 cups of water in a heavy bottomed vessel.Add apinch of salt and lwt it boil.Once water boils,add rice to it and close and cook.When rice is almost cooked,add melted and filtered jaggery and grated coconut and mix and let it cook in low flame.Now if you wish to have it like kanji/porridge consistency do not cook it till it forms a mass but switch off as its loose like porridge and add cardamom and cumin/chukku powder and mix well.
Transfer to a bowl and garnish with cashews and raisins.But if you wish to get it set into pieces like how I did then cook till it forms a mass and add cardamom powder and chukku powder and mix and transfer to a plate and spread evenly and garnish with cashews and raisins and let it set as it cools.Once set cut them into pieces and serve😋
